The fruit was organically grown by Nev Pfeiffer.
9 days on skins, with minimal extraction/ punch downs. Pressed and matured in neutral French oak for 5 months. Unfined and unfiltered.
Tiny-Tiny batch!Dry grown vines on the sandy valley floor.
Grapes were hand picked at 11 baumé, 100% destemmed and sealed in tank with dry ice. Wild fermented on skins for 9 days with minimal punch downs. Pressed to tank and settled, before racking to neutral French oak where it was matured for 6.5months.
Except a minimal amount of sulphur added before bottling, this wine had zero additions. No fining and no filtration.Nose: tropical, apricot, lemon curd and pear.
Palate: light body, citrus/ orange and grippy tannins with balanced acidity.
Pair well with spicy Asian coconut curry, stinky cheese and shell fish
