    Single vineyard fruit destemmed and gently pressed off.
    Pressings used to deliver depth, phenolics and complexity.
    100% Barrel fermented utilising wild yeast and on fine lees for 9 months maturation. Neutral Mercury French oak Hogs Heads and a Radoux 4rd used puncheon. Bottled with minimal sulphur, unfined and unfiltered.

        _ Nose: ripe pears, quince, nashi pear, golden delicious apples, candied ginger and orange blossom.

        _ Palate: nashi pear, waxy, round, nougat, preserved lemon, honeycomb, hazelnut, cashew and macadamia nuts, fennel pollen.
